I was cleaning out the fridge today and noticed some forgotten berries hiding in the corner. They weren't moldy or anything, just not so fresh, you'd want to eat them just like that. So I made some muffins. These berries aren't the sweetest but the muffins are surprisingly so. The berries are the tang to the sugary breadness. Also threw in what was left of the frozen raspberries I had in the freezer.
Preheat the oven 375 degrees F. Grease or line some muffins tins.
1/4 cup oil
1/2 cup soy milk
1/2 tsp pure vanilla extract
2 tsp sour cream
Mix these wet ingredients together in a small bowl.
1/2 tsp salt
2 tsp baking powder
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
Mix these dry ingredients together in a larger bowl.
Add 1 cup of fresh sliced strawberries to the flour mixture and toss to coat berries in flour.
Stir in wet ingredients till just moistened. Spoon into muffin tin. Bake for 20 minutes.
Makes about 9 muffins.
