Oatmeal Apple Muffins
This muffin is meant to replace the hot oatmeal breakfast I use to make most mornings for Scott to bring to work. That was before Max was born. I left out the raisins, although that would be good, but its got most of the other elements including the brown sugar sprinkled on top.
1 cup oatmeal
1 cup soy milk
1/3 cup oil
1/3 cup honey
1 cup flour
1 tsp cinnamon
1/2 tsp salt
2 tsp baking powder
brown sugar (to sprinkle on top)
2 small apples, peeled and chopped
Preheat oven to 400 degrees F. Grease a 12 cup muffin tin.
In a small bowl, mix together oatmeal and milk. Let soak for 15 minutes. Add chopped apples to oatmeal mixture.
In a larger bowl, beat together egg and oil. Mix in honey. Add salt, cinnamon and baking powder to egg mixture. Add oatmeal mixture. Stir in flour until just combined. Fill muffin tins till almost full and sprinkle with brown sugar. Bake for 15-20 minutes or until done.
Makes 12 muffins
